One Pan Kielbasa and Potatoes

A quick and flavorful weeknight dinner featuring smoky kielbasa, tender potatoes, and vibrant vegetables, all roasted in a single pan.

  • 1 lb kielbasa (smoked or turkey)
  • 45 baby red, Yukon gold, or russet potatoes
  • 1 bell pepper (any color)
  • 1 onion
  • 1 cup green beans
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh parsley (optional garnish)

Instructions

  1. Prep the ingredients: Slice kielbasa into 1/2-inch rounds, chop potatoes into bite-size pieces, slice bell peppers and onions, and trim green beans.
  2. Season everything: In a bowl or directly in the pan, combine all ingredients, drizzle with olive oil, and toss to coat.
  3. Cook it up: Preheat oven to 400°F (200°C) and roast for 25-30 minutes or on stovetop over medium heat for 20-25 minutes until potatoes are tender.
  4. Serve: Transfer to a serving dish and garnish with parsley.

Notes

For crispier potatoes, soak them in cold water for 10 minutes before cooking. Store leftovers in an airtight container for up to 3 days.
