One-Pot Cheesy Garlic Pasta

A rich, creamy pasta dish infused with garlic, perfect for busy weeknights.

  • 1 lb (450g) Linguine or Fettuccine
  • 2 Tablespoons Unsalted Butter
  • 2 Tablespoons Olive Oil
  • 810 Cloves Garlic, Minced
  • 4 Cups (960ml) Chicken or Vegetable Broth
  • 1 Cup (240ml) Whole Milk or Heavy Cream
  • 1 Teaspoon Salt (or to taste)
  • 1/2 Teaspoon Black Pepper, Freshly Ground
  • 1/4 Teaspoon Red Pepper Flakes (Optional)
  • 1 1/2 Cups (150g) Parmesan Cheese, Freshly Grated
  • 1 Cup (112g) Mozzarella Cheese, Shredded (Optional)
  • 1/4 Cup Fresh Parsley, Chopped

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat. Add minced garlic and sauté for 30-60 seconds until fragrant.
  2. Pour in the broth and milk (or cream), adding salt, pepper, and optional red pepper flakes. Stir to combine.
  3. Add the linguine, ensuring it’s submerged. If necessary, push it down gently.
  4. Bring to a gentle simmer on medium-high heat, stirring occasionally.
  5. Once simmering, reduce heat to medium-low and cook for 10-15 minutes, stirring frequently, until pasta is al dente and sauce is thickened.
  6. Remove from heat, stir in grated Parmesan and mozzarella (if using), until melted and smooth.
  7. Let sit for 2-3 minutes to thicken. Stir in chopped parsley before serving.

Notes

Allow the butter to come to room temperature before melting for easier incorporation.
