One-Pot Creamy Cajun Sausage Pasta

A comforting and creamy pasta dish with smoked sausage, colorful bell peppers, and rich Cajun spices, made all in one pot for easy cleanup.

  • 10 ounces smoked sausage (Andouille or kielbasa)
  • 4 ounces pasta (penne or rigatoni)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Slice the smoked sausage into thin rounds.
  2. Chop the bell peppers and onions.
  3. In a large skillet or pot, heat olive oil over medium heat and sauté the sausage for 5-7 minutes until browned.
  4. Remove the sausage and cook the bell peppers and onions in the same pot for 3-4 minutes until softened.
  5. Add Cajun seasoning and stir for a minute.
  6. Pour in chicken broth and simmer for 2 minutes.
  7. Add pasta and cook according to package instructions (8-10 minutes).
  8. Reduce heat and mix in heavy cream and Parmesan until melted.
  9. Return sausage to pot and combine.
  10. Garnish with parsley and serve.

Notes

Ensure heavy cream is at room temperature to avoid curdling. Store leftovers in an airtight container for 3-4 days.
