One Skillet Salmon with Lemon Orzo

  • 2 Salmon Fillets
  • 1 Cup Orzo Pasta
  • 2 Cups Vegetable Broth
  • 1 Lemon (zested and juiced)
  • 2 Cloves Garlic (minced)
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to Taste
  • Fresh Parsley (for garnish)

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. When shimmering, add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the salmon fillets to the skillet, skin-side down, and season with salt and pepper. Cook for 4-5 minutes on each side until golden brown and flakes easily.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the orzo pasta and vegetable broth. Bring to a boil, then reduce to a simmer and cook for 8-10 minutes until the orzo is tender.
  5. Stir in the lemon zest and juice, then return the salmon to the skillet to warm through for about 2 minutes.
  6. Garnish with fresh parsley before serving.

Notes

For a twist, substitute orzo with quinoa or add seasonal vegetables like asparagus or spinach. Store leftovers in an airtight container for up to 2 days.
