Caramelized Onion and Gruyere Cheese Dip

A mouthwatering blend of sweet caramelized onions and creamy Gruyere cheese, perfect for any gathering.

  • 2 tablespoons butter or olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1 clove garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup sour cream or mayonnaise
  • 2 cups Gruyere cheese, shredded (reserve 1/2 cup for topping)
  • 1/4 cup Parmesan cheese, grated (optional, for topping)
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme, plus more for garnish

Instructions

  1. Heat 2 tablespoons of butter or olive oil in a skillet over medium-low heat. Add the onions and sprinkle with 1/2 teaspoon of salt. Cook for 30 to 35 minutes until golden brown and caramelized.
  2. Once onions are caramelized, add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. In a mixing bowl, combine softened cream cheese, sour cream, and 1.5 cups of shredded Gruyere. Stir until smooth.
  4. Fold in caramelized onions, thyme, remaining salt, and black pepper.
  5. Transfer the mixture to a greased baking dish, sprinkle with reserved Gruyere and Parmesan if using.
  6. Preheat oven to 375°F (190°C) and bake for 20 to 25 minutes until hot and bubbly.
  7. Let cool slightly, garnish with thyme or parsley, and serve warm with dippers.

Notes

This dip can be made a day in advance, just store it in the fridge and bake when needed. Store leftovers in an airtight container for up to four days.
