Ingredients

Scale
  • For the Crust:
  • 1 cup digestive biscuit crumbs (or graham crackers)
  • 3 tbsp unsalted butter, melted
  • 1 tbsp brown sugar
  • For the Filling:
  • 12 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tbsp orange zest
  • ¼ cup fresh orange juice
  • 1 tsp vanilla extract
  • ½ cup heavy cream, whipped to stiff peaks
  • 1 tsp gelatin + 1 tbsp water (optional, for stability)
  • For the Topping:
  • 2 oranges, segmented
  • 2 tbsp orange marmalade (heated and strained for glaze)
  • Optional: Mint leaves for garnish

Instructions

  1. Make Crust: Mix crumbs, butter, and sugar. Press 1 tbsp into each serving cup. Chill 15 mins.
  2. Prepare Filling: Beat cream cheese, sugar, zest, juice, and vanilla until smooth. If using gelatin, bloom in water, melt, then mix in. Fold in whipped cream.
  3. Layer: Pipe or spoon filling over crusts. Chill 4+ hours.
  4. Finish: Top with orange segments and brush with marmalade glaze. Garnish with mint.

Notes

  • Zest Tip: Use organic oranges and zest before juicing
  • Make Ahead: Keep assembled cups refrigerated for 3 days
  • No-Bake: Skip gelatin for softer texture (serve same day)
  • Variations: Add 1 tsp Grand Marnier for adult version
