Irresistible Orange Cranberry Scones with Lush Glaze

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or dried cranberries
  • 1 cup powdered sugar, sifted
  • 23 tablespoons fresh orange juice
  • 1/2 teaspoon orange zest (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and orange zest.
  3. Add the cubed butter and blend until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, egg, and vanilla extract.
  5. Pour the wet mixture over the dry ingredients, then gently stir in cranberries until just combined.
  6. Turn the dough onto a floured surface and pat it into a round, roughly 7 inches in diameter and 1 inch thick. Cut into 8 wedges.
  7. Place the wedges on the prepared baking sheet and brush the tops with extra cream.
  8. Bake for 16–18 minutes or until golden brown and firm to the touch.
  9. Transfer to a wire rack to cool completely.
  10. To make the glaze, mix powdered sugar, orange juice, and orange zest until smooth. Drizzle over cooled scones before serving.

Notes

These scones are best enjoyed fresh but can be stored in an airtight container for up to 2 days or in the fridge for 5 days.
