  • 8 oz Cream Cheese (room temperature)
  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs (room temperature)
  • 1 1/2 cups Oreo pieces (about 12 Oreos)
  • 1/2 cup Oreo crumbs (about 5 Oreos)

Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat cream cheese, white sugar, and vanilla extract until creamy. Refrigerate while preparing the cookie dough.
  2. Make the Cookie Dough: Preheat oven to 350°F (175°C). In a bowl, whisk flour, baking soda, baking powder, and salt. In another bowl, mix melted butter, brown sugar, and white sugar until blended. Add eggs and vanilla, then mix in dry ingredients.
  3. Assemble the Cookies: Fold in Oreo pieces. Drop half of the cookie dough on a lined baking sheet, place cheesecake filling on top, then cover with more dough. Flatten slightly.
  4. Bake the Cookies: Bake for 10-12 minutes until edges are golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For thick cookies, chill dough for 30 minutes before baking. Store in an airtight container at room temperature for up to 3 days.
