  • 1 loaf of French bread, cubed
  • 4 large eggs
  • 2 cups milk
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/4 cup chopped pecans (optional)
  • Maple syrup for serving

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Spread the cubed French bread evenly in the dish.
  3. In a bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, pumpkin pie spice, and salt until smooth.
  4. Pour the mixture over the bread, ensuring all pieces are soaked.
  5. Sprinkle chopped pecans on top if using.
  6. Cover and refrigerate overnight.
  7. Preheat the oven to 350°F (175°C).
  8. Bake uncovered for 45-50 minutes or until golden and set.
  9. Serve warm with maple syrup.

Notes

For best results, use day-old French bread, and ensure all ingredients are at room temperature.
