  • 23 tablespoons vegetable oil
  • 1 cup Italian salad dressing
  • ½ cup Parmesan cheese, finely chopped
  • ½ cup Provolone cheese, finely chopped
  • ⅓ cup Ranch dressing
  • ¼ cup melted butter
  • ¾ cup panko breadcrumbs
  • 2 teaspoons garlic powder
  • ¼ teaspoon salt
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Prepare the Chicken: Place the chicken breasts in a large resealable plastic bag. Remove excess air and seal. Using a meat mallet, gently pound each breast to an even ½-inch thickness.
  2. Marinate: Season both sides of the chicken lightly with salt and pepper. Pour in the Italian salad dressing, seal the bag, and refrigerate for at least 30 minutes.
  3. Sear the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden and cooked through.
  4. Preheat your Broiler: Set your oven’s broiler to high.
  5. Make the Cheese Mixture: Combine Parmesan cheese, Provolone cheese, and Ranch dressing in a microwave-safe bowl. Microwave until melted and creamy.
  6. Assemble the Chicken: Spread the cheese mixture evenly over the chicken breasts.
  7. Prepare the Breadcrumb Topping: Mix melted butter, garlic powder, salt, and panko breadcrumbs. Spoon this mixture over the cheese layer.
  8. Broil to Perfection: Broil the chicken for 3-4 minutes until the topping is golden and crispy.
