Parmesan Garlic Chicken Mac and Cheese

A comforting and creamy mac and cheese dish that combines succulent chicken and rich cheeses, perfect for family dinners or quick weeknight meals.

  • 1 lb boneless skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Buffalo Wild Wings Parmesan Garlic Sauce (enough to coat)
  • 8 oz elbow macaroni
  • 2 cups whole milk
  • 2 1/2 cups shredded Colby Jack cheese
  • 8 oz cream cheese (softened and cubed)
  • 1/4 cup grated Parmesan cheese (or to taste)
  • Fresh parsley (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish by lightly greasing it.
  2. Season the chicken breasts with salt, black pepper, paprika, and garlic powder. For deeper flavor, marinate the chicken for at least 30 minutes.
  3. Bring a large pot of salted water to a boil. Cook the elbow macaroni al dente according to package instructions and reserve a cup of pasta water before draining.
  4. In a separate saucepan, combine whole milk, cream cheese, and shredded cheese over medium heat, stirring frequently until melted and smooth. Add reserved pasta water if needed.
  5. Layer the cooked macaroni into the greased baking dish. Mix the cooked chicken pieces with Buffalo Wild Wings Parmesan Garlic Sauce and add them evenly over the macaroni.
  6. Pour the cheese sauce over the mixture, stirring gently. Top with additional shredded cheese if desired.
  7. Bake for 25-30 minutes or until the top is golden brown and bubbly. Let cool slightly before garnishing with fresh parsley.

Notes

For a vegetarian option, substitute chicken with roasted vegetables. For a gluten-free version, use gluten-free pasta.
