  • 3 very ripe bananas
  • 1/4 cup smooth natural peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/4 cup instant or quick-cooking oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash the bananas in a large bowl until almost smooth.
  3. Add the peanut butter and vanilla extract; mix until well combined.
  4. Fold in the oats, salt, and baking powder until just combined.
  5. Gently fold in 1/3 cup of chocolate chips.
  6. Transfer the mixture to the prepared loaf pan and smooth the top. Sprinkle remaining chocolate chips on top.
  7. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  8. Let cool for about 10 minutes, then transfer to a wire rack and slice into 6-8 pieces.

Notes

Store bars in an airtight container at room temperature for 3 days, in the fridge for 1 week, or freeze for up to 2 months.
