Peanut Butter Banana Cinnamon Rolls

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plant-based butter
  • 3/4 cup almond milk (or any plant-based milk)
  • 1 ripe banana, mashed
  • 1/2 cup peanut butter
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt, whisking until well mixed.
  3. Cut in the plant-based butter until the mixture resembles coarse crumbs.
  4. Stir in the almond milk and mashed banana until a soft dough forms.
  5. Roll out the dough into a rectangle about ¼ inch thick on a floured surface.
  6. Spread the peanut butter over the dough, then sprinkle with cinnamon and brown sugar.
  7. Roll the dough tightly into a log and slice into individual rolls, about 1 to 1.5 inches thick.
  8. Place the rolls in a greased baking dish and bake for 25-30 minutes until golden brown.
  9. Drizzle with a simple vegan icing if desired and serve warm.

Notes

Make sure your plant-based butter and almond milk are at room temperature for best results. Optional icing made from powdered sugar and almond milk can be added post-baking.
