Peanut Butter Oatmeal Chocolate Chip Cookies

  • 2 large eggs
  • 1 cup peanut butter
  • 1/3 cup pure maple syrup
  • 1 1/2 cups rolled oats
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 tsp sea salt
  • 2/3 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a large cookie sheet with parchment paper.
  2. In a mixing bowl, whisk the eggs until lightly beaten.
  3. Add peanut butter and maple syrup to the eggs; stir until smooth.
  4. Gradually stir in oats, baking soda, cinnamon, and sea salt until a thick dough forms.
  5. Fold in chocolate chips until evenly distributed.
  6. Scoop mounds of dough onto the prepared cookie sheet, spacing them 2 inches apart.
  7. Bake for 9-12 minutes until edges are firm and centers are soft.
  8. Cool on the sheet for 10 minutes before transferring to a wire rack.

Notes

Cookies can be stored in an airtight container for up to a week. For extra gooey cookies, under-bake them slightly.
