Delightful Peanut Butter Yogurt Parfait

Delicious peanut butter yogurt parfait layered with fruit and granola

A layered delight of creamy peanut butter yogurt, fresh fruit, and crunchy granola, perfect for breakfast or a snack.

Ingredients

  • 2 cups plain Greek yogurt (whole milk)
  • 1/2 cup creamy peanut butter
  • 24 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup granola
  • 1 cup fresh fruit (such as berries, bananas, or peaches)
  • Optional: Chopped nuts, shredded coconut, chocolate chips or cacao nibs

Instructions

  1. In a medium mixing bowl, combine Greek yogurt, peanut butter, sweetener, and vanilla extract. Mix until smooth, about 2 minutes.
  2. Wash and slice fresh fruits, and prepare granola and optional toppings.
  3. In serving glasses, layer peanut butter yogurt, followed by a layer of granola and fresh fruit.
  4. Repeat the layers at least twice for a visually appealing parfait.
  5. Top with a dollop of peanut butter yogurt, more fruit, and any optional toppings.
  6. Serve immediately or chill in the fridge for about 30 minutes.

Notes

Use quality ingredients for the best taste. These parfaits can be made in advance but add granola only at serving time for crunch.
