Festive Peppermint Bark Cookies

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peppermint bark, chopped
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until fluffy and pale, about 3-5 minutes.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chopped peppermint bark and crushed candy canes.
  7. Drop spoonfuls of the dough onto baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  9. Let cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Notes
