Delicious Peppermint Mocha Cookies that perfectly blend the rich flavors of chocolate, coffee, and peppermint, making them a perfect holiday treat.

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1/2 cup (100 g) brown sugar, packed
  • 1/2 cup (100 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (40 g) unsweetened cocoa powder
  • 1 tbsp espresso powder or instant coffee
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups (454 g) semi-sweet chocolate chips, divided
  • 3 large candy canes or 6 small candy canes, crushed for garnishing

Instructions

  1. Cream the butter and sugars until light and fluffy.
  2. Add in the egg, egg yolk, vanilla extract, and peppermint extract.
  3. Mix the dry ingredients in a separate bowl.
  4. Combine the wet and dry ingredients, then fold in chocolate chips.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop dough onto the baking sheets and bake for 10-12 minutes.
  8. Let cookies cool and dip in melted chocolate, garnishing with crushed candy canes.
