Ultimate Perfect Banana Bread

A comforting twist on classic banana bread with rich flavors from sour cream and vanilla.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 to 4 ripe bananas, mashed (about 1 ¼ cups)
  • 3/4 cup granulated sugar (or a mix of brown and granulated sugar)
  • 2 large eggs
  • 6 tablespoons unsalted butter, melted and cooled
  • 1/3 cup sour cream (or plain Greek yogurt)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour an 8½ x 4½ inch loaf pan.
  3. In a medium bowl, whisk together the flour, baking soda, and salt.
  4. In a large bowl, mash the ripe bananas until mostly smooth.
  5. Add sugar, eggs, melted butter, sour cream, and vanilla extract to the mashed bananas and stir until smooth.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  9. Let the bread cool in the pan for 15 to 20 minutes before transferring to a wire rack.

Notes

Wrap banana bread tightly in plastic wrap and store at room temperature for 2-3 days. For longer storage, freeze slices.
