  • 1 cup pumpkin puree
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 tsp pumpkin spice mix
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and sugar two loaf pans.
  2. Mix the pumpkin puree, eggs, vegetable oil, sugar, and dark brown sugar until smooth.
  3. Combine the all-purpose flour, baking soda, baking powder, salt, and pumpkin spice in another bowl.
  4. Gradually add the dry ingredients to the wet mixture and stir gently.
  5. Divide the batter equally into the prepared loaf pans.
  6. Sprinkle additional sugar on top for crunch.
  7. Bake for 60-65 minutes until a toothpick comes out clean.
  8. Cool in pans for 15 minutes before transferring to a wire rack.
