Perfect Pumpkin Pancakes

Delicious and fluffy pumpkin pancakes combining fall flavors for a perfect breakfast treat.

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup pumpkin puree
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Butter and maple syrup for topping

Instructions

  1. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until combined.
  2. In another bowl, whisk together pumpkin puree, milk, egg, and melted butter until creamy.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  4. Preheat a griddle or skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  6. Serve hot with butter and maple syrup.

Notes

For a dairy-free option, substitute milk with almond milk and butter with coconut oil. You can also try adding chocolate chips or nuts for extra flavor.
