  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugars until light and fluffy.
  3. Add in the pumpkin, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually combine the dry ingredients with the wet mixture until just combined.
  6. Fold in the chocolate chips.
  7. Scoop spoonfuls of dough onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Cool on wire racks before serving.

Notes

For an extra burst of flavor, add a pinch of cloves or allspice. Avoid overbaking to keep the cookies soft.
