Peruvian Green Sauce

A vibrant and zesty Peruvian Green Sauce, perfect for enhancing grilled meats, roasted veggies, and sandwiches with fresh flavors.

Ingredients

  • 1 1/4 cup fresh cilantro, chopped
  • 12 jalapeños, seeds and membrane removed
  • 12 garlic cloves, smashed
  • 1 green onion, sliced
  • Juice of 1 lime
  • 1/4 cup + 2 tablespoons plain Greek yogurt
  • 1/4 cup mayo
  • 1 teaspoon rice vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon kosher salt, more to taste
  • Pinch of ground black pepper

Instructions

  1. Prep your ingredients by rinsing cilantro, chopping it, slicing green onions, and smashing garlic cloves.
  2. Add all ingredients to a high-powered blender or food processor.
  3. Blend until smooth and creamy; scrape sides as needed.
  4. Taste and adjust seasoning if necessary.
  5. Serve the sauce in a bowl alongside grilled meats or veggies.

Notes

For enhanced flavor, allow the sauce to rest in the fridge for at least 30 minutes before serving.
