Delectable Pignoli Cookies

Traditional Italian almond cookies featuring a rich almond paste and crunchy pine nuts, perfect for any occasion.

  • 8 oz Almond Paste
  • 1 large Egg
  • 1 cup Granulated Sugar
  • 1 cup Pine Nuts
  • Dusting Sugar for Rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond paste and granulated sugar, mixing until smooth.
  3. Add the egg and blend until combined.
  4. Scoop tablespoon-sized portions of the dough and roll into balls.
  5. Roll each ball in pine nuts to coat and place on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes until edges are golden and centers remain soft.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
