  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1012 rings Canned Pineapple, well-drained and patted dry
  • Additional Sugar for Sprinkling

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cream the softened butter and granulated sugar together until light and fluffy, then add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  4. Fold in the pineapple rings, ensuring they’re evenly distributed in the dough.
  5. Scoop tablespoon-sized dollops onto a baking sheet lined with parchment paper, leaving space for spreading. Sprinkle a little extra sugar on top of each cookie.
  6. Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden.
