Pistachio Dream Cookie Bars

Delightful and decadent cookie bars that blend creamy pistachio pudding with classic sugar cookies, perfect for any occasion.

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 3.4 oz pistachio instant pudding mix
  • 1 package sugar cookie mix

Instructions

  1. Preheat your oven to 375°F.
  2. Cream together the softened butter, eggs, and pistachio pudding mix until smooth.
  3. Gradually add the sugar cookie mix, stirring until a sticky dough forms.
  4. Grease a 10 x 15-inch baking sheet.
  5. Press the dough evenly into the pan.
  6. Bake for 18-22 minutes, or until the edges are lightly golden.
  7. Allow to cool before slicing into bars.

Notes

If the dough is sticky, chill it for 30 minutes before pressing into the pan. Can be easily modified for gluten-free diets.
