Creamy Potato and Corn Chowder

A cozy dish that combines tender potatoes, sweet corn, and aromatic herbs for a heartwarming meal.

  • 4 medium potatoes, diced
  • 1 cup corn kernels (fresh or frozen)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup milk or cream
  • Salt and pepper, to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until it’s crispy and golden, about 6-8 minutes. Remove the bacon and set it aside.
  2. Add the diced onion to the pot and sauté for about 3-4 minutes, or until translucent. Toss in the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced potatoes and corn, mixing well and sautéing for about 2-3 minutes.
  4. Carefully add the broth, bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes until the potatoes are tender.
  5. Stir in the milk or cream, and return the crisp bacon to the pot. Season with salt, pepper, and thyme (if using). Cook for an additional 5 minutes on low heat.
  6. Ladle into bowls and enjoy hot, optionally garnishing with fresh herbs.

Notes

Using room-temperature ingredients helps them blend beautifully. Add spices like smoked paprika or cayenne for a kick!
