Irresistibly Moist Pumpkin Bread with Cream Cheese Frosting

  • 3/4 cup white granulated sugar

  • 1 can pumpkin purée (15 oz can)
  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup unsalted butter (melted and cooled)
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 1/4 cup milk
  • 2 oz cream cheese (room temperature)
  • 2 tbsp unsalted butter (room temperature)
  • 1 tsp pure vanilla extract
  • 1/2 cup powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and pumpkin pie spice. Set aside.
  3. In another bowl, combine the pumpkin purée, eggs, vanilla extract, and melted butter. Mix until well blended.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until combined.
  5. Transfer the batter to your prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. While the bread cools, beat together the cream cheese, butter, and vanilla extract until creamy. Gradually add the powdered sugar and mix until smooth.
  8. Once the bread is completely cool, spread the cream cheese frosting on top.

Notes

For optimal results, ensure butter and cream cheese are at room temperature for easy mixing. You can also customize the recipe with chocolate chips or nuts.
