  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by lining it with parchment paper.
  2. Make the crust by combining the graham cracker crumbs and sugar in a bowl, then adding the melted butter and pressing into the bottom of the pan. Bake for 8-10 minutes.
  3. Prepare the filling by beating cream cheese and sugar until smooth, then gradually add pumpkin puree, eggs, vanilla, spices, and salt. Beat until creamy.
  4. Assemble by pouring the pumpkin cheesecake filling over the cooled crust and spreading it evenly. Bake for 35-40 minutes.
  5. Chill the bars at room temperature, then refrigerate for at least 3 hours to set fully.
  6. Slice and serve with whipped cream or a sprinkle of cinnamon.
