  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine graham cracker crumbs and melted butter, then press into the bottom of the baking pan.
  3. In a large bowl, beat sugar and cream cheese until smooth.
  4. Mix in pumpkin puree, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until well combined.
  5. Pour the mixture over the crust and spread evenly.
  6. Bake for 35-40 minutes until set with a slight jiggle in the center.
  7. Cool for 30 minutes, then refrigerate for at least 2 hours before slicing.
  8. Cut into squares and enjoy!
