Ultimate Pumpkin Cheesecake Cookies

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 egg yolk (for cheesecake filling)
  • 1/2 tsp vanilla extract (for cheesecake filling)

Instructions

  1. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in the pumpkin puree, egg, and 1 tsp vanilla extract until well blended.
  3. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. In another bowl, beat the cream cheese until smooth, then mix in granulated sugar, egg yolk, and remaining vanilla extract until fluffy.
  6. Take tablespoon-sized cookie dough balls, make an indentation and fill it with cheesecake mixture.
  7. Seal the filling inside the cookie dough.
  8. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Bake for 12 to 15 minutes until edges are lightly golden.
  10. Let cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use room-temperature ingredients for better blending. Measure pumpkin carefully for the right dough consistency.
