Delicious Pumpkin Coffee Cake Cookies

Delightful cookies that blend the comforting flavors of coffee cake with the softness of pumpkin, perfect for fall.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well. Stir in pumpkin puree and vanilla extract.
  5. Gradually fold in the dry ingredients until just combined.
  6. Scoop heaping tablespoons onto baking sheets with space in between.
  7. Bake for 12-15 minutes until edges are golden brown and tops are set. Cool on racks before serving.

Notes

Enjoy fresh out of the oven with a drizzle of caramel sauce or powdered sugar. Store in an airtight container to keep them fresh.
