Pumpkin Cream Cheese Muffins

Delightful pumpkin muffins infused with a creamy cheese filling, perfect for cozy fall mornings.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 ½ cups pumpkin puree
  • 1 large egg, at room temperature
  • ¼ cup unsalted butter, melted
  • 1 ½ tsp vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 2 tsp all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin pan by greasing or lining with paper liners.
  3. Combine the dry ingredients in a large bowl.
  4. Mix the wet ingredients in a separate bowl.
  5. Combine the wet and dry ingredients until just mixed.
  6. Prepare the cream cheese filling in another bowl.
  7. Fill the muffin pan with half the batter.
  8. Add the cream cheese filling in the center of each muffin.
  9. Top with the remaining batter.
  10. Bake for 15 to 20 minutes until a toothpick comes out clean.
  11. Cool for 10 minutes before transferring to a wire rack.

Notes

For a crunchy topping, sprinkle a dash of cinnamon sugar on top before baking.
