  • 1/2 cup melted butter
  • 3/4 cup light brown sugar

  • 2 eggs

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. Combine flour, pumpkin pie spice, cinnamon, baking powder, and sea salt in a small bowl.
  3. Mix pumpkin puree and melted butter in a large bowl until well combined.
  4. Add brown sugar and granulated sugar, stirring until smooth.
  5. Stir in eggs one at a time, mixing well after each addition, followed by vanilla extract.
  6. Fold in the dry ingredients into the wet mixture until a smooth batter forms.
  7. Fill each muffin cup with about 1/4 cup of batter.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
