Heavenly Pumpkin Pecan Bread Pudding

A comforting and delicious pumpkin pecan bread pudding, perfect for fall gatherings and family traditions.

  • 4 cups cubed bread (challah or brioche recommended)
  • 2 cups milk (whole or dairy-free)
  • 1 cup pumpkin puree
  • 1/2 cup sugar (granulated or brown)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 cup chopped pecans
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine milk, pumpkin puree, sugar, eggs, vanilla extract, pumpkin spice, and salt. Whisk until smooth.
  3. Add cubed bread and chopped pecans, gently stirring until fully coated.
  4. Pour mixture into a greased 9×13 inch baking dish, spreading evenly.
  5. Bake for 45-50 minutes until the center is set and the top is golden brown.
  6. Allow to cool slightly before serving. Enjoy warm!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat individual portions in the microwave.
