Irresistibly Soft Pumpkin Scones

Soft, pillowy pumpkin scones with warm spices and a sweet glaze, perfect for breakfast or an afternoon treat.

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup cold butter, cubed
  • 1/2 cup canned pumpkin
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Add the cubed cold butter to the dry mix and cut in until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the pumpkin, milk, egg, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  6. Turn the dough out onto a floured surface and gently knead a few times, then pat into a 1-inch thick circle and cut into wedges.
  7. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  8. While the scones are baking, whisk together the powdered sugar, milk, and vanilla extract for the glaze until smooth.
  9. Drizzle the glaze over the warm scones once they are out of the oven.

Notes

Ensure your butter is very cold for a flaky texture. You can add chocolate chips, walnuts, or cranberries for variations.
