  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon all-purpose flour (optional)
  • Toppings: whipped cream, caramel sauce, chopped pecans, ground cinnamon or nutmeg (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a lined 9×13 inch baking pan.
  3. Bake the crust for about 8 to 10 minutes until lightly golden. Let cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually add 3/4 cup sugar and mix in eggs one at a time.
  5. Add pumpkin puree, vanilla extract, pumpkin pie spice, and optional flour. Mix until smooth.
  6. Pour the filling over the cooled crust and spread evenly. Bake for 35 to 40 minutes until the edges are set but the center jiggles slightly.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least 4 hours (or overnight) before slicing.

Notes

These bars can be made several days in advance, making them great for stress-free entertaining.
