  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers (about 1-2 minutes).
  2. Add the minced garlic and sauté for about 1 minute, stirring frequently, until fragrant.
  3. Toss in the sliced mushrooms and sauté for about 5-7 minutes until golden brown and tender.
  4. Add the fresh spinach, season with salt and pepper, and cook for another 2-3 minutes until the spinach wilts down.
  5. Serve warm as a side dish or over quinoa for a complete meal.

Notes

For a deeper flavor, allow the mushrooms to brown longer before adding spinach. Avoid overcrowding the pan for best results.
