Raspberry Fluff Salad

A retro-style fluffy fruit salad featuring sweet raspberries, creamy marshmallow filling, and crunchy pecans. This no-bake treat is perfect for potlucks and holiday gatherings!

Ingredients

  • 1 (3.4 oz) package instant raspberry gelatin (or strawberry)
  • 1 cup boiling water
  • 1 (8 oz) container frozen whipped topping (Cool Whip), thawed
  • 1 (20 oz) can crushed pineapple, well drained
  • 2 cups fresh raspberries (or frozen, thawed and drained)
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 cup raspberry yogurt (or vanilla)
  • Garnish:
  • Whole raspberries
  • Mint leaves
  • Toasted coconut flakes

Instructions

  1. Dissolve gelatin in boiling water. Cool to room temperature (about 20 mins).
  2. In large bowl, fold together whipped topping and yogurt until smooth.
  3. Gradually fold in cooled gelatin until fully incorporated.
  4. Gently mix in pineapple, raspberries, marshmallows, and nuts (if using).
  5. Cover and refrigerate at least 4 hours (overnight is best).
  6. Garnish with fresh raspberries and mint before serving.

Notes

  • For firmer texture: Use 1/2 cup less water when dissolving gelatin
  • Make ahead: Keeps refrigerated up to 3 days
  • Festive twist: Layer with angel food cake cubes in trifle dish
  • Lighter option: Use sugar-free gelatin and light yogurt
