  • 6 cups seedless watermelon, cubed (from 1 medium watermelon)
  • 2 large limes, zested and juiced
  • 1/4 cup fresh mint leaves, finely chopped
  • 4 oz crumbled feta cheese (optional)
  • 1/2 small red onion, very thinly sliced (optional)
  • 1 tablespoon honey or agave nectar (optional)

Instructions

  1. Cut watermelon into 1-inch cubes and place in a large bowl.
  2. In a small bowl, whisk together lime zest, lime juice, and honey/agave (if using).
  3. Add chopped mint, feta cheese, and red onion (if using) to the watermelon.
  4. Pour lime dressing over the watermelon mixture and gently toss to combine.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled, garnished with additional mint leaves if desired.
