Refreshing Rhubarb Lemonade

A delightful twist on classic lemonade, this Rhubarb Lemonade combines the tartness of rhubarb with the brightness of fresh lemon juice, perfect for quenching your thirst on a hot summer day.

Ingredients

  • 3 cups rhubarb, chopped (about 4 stalks)
  • 1 cup sugar
  • 1.5 cups water
  • 1/2 cup lemon juice (about 4 lemons)
  • 6 cups cold water
  • Ice cubes
  • Lemon slices and strawberries (optional, for garnish)

Instructions

  1. Combine 1.5 cups of water and 1 cup of sugar in a saucepan and bring to a gentle simmer, stirring until the sugar dissolves, about 5-7 minutes.
  2. Add 3 cups of chopped rhubarb to the simple syrup and simmer for an additional 10-15 minutes until the rhubarb is mushy.
  3. Strain the syrup through a fine-mesh sieve into a large pitcher, pressing the solids to extract juice.
  4. Stir in 1/2 cup of freshly squeezed lemon juice and 6 cups of cold water; mix well and chill in the fridge for at least an hour.
  5. Serve over ice and garnish with lemon slices and strawberries if desired.

Notes

Ensure rhubarb is at room temperature for even cooking. Customizable sweetness as per preference.
