  • 1 cup ricotta cheese
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper, then bake for about 5-7 minutes until crispy and lightly golden.
  4. While baking, slice cherry tomatoes in half and toss with olive oil, salt, and pepper.
  5. Spread ricotta cheese on each crostini once they cool.
  6. Top with roasted cherry tomatoes and drizzle with balsamic glaze.
  7. Garnish with fresh basil leaves before serving.

Notes

For best results, let the ricotta come to room temperature before spreading. Bake at 375°F (190°C) for a longer time if needed.
