  • 6 medium beets (tops removed, scrubbed well)
  • Extra-virgin olive oil (for drizzling)
  • Sea salt
  • Freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the beets by placing each on aluminum foil, drizzling with olive oil, and seasoning with salt and pepper.
  3. Wrap the beets tightly in foil and place on a baking sheet.
  4. Roast in the oven for 35 to 60 minutes, checking for fork-tenderness at 35 minutes.
  5. Remove from the oven and unwrap foil carefully. Allow to cool, then slip off the skins under running water.
  6. Slice the beets, drizzle with more olive oil, and season to taste before serving.
