Irresistibly Sweet & Savory Roasted Carrots

Delightfully easy roasted carrots that transform ordinary carrots into buttery-wonderful bursts of flavor, perfect for any occasion.

Ingredients

  • 1 pound carrots, cut into 2-inch pieces
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the carrots with olive oil, honey or maple syrup, sea salt, and black pepper.
  3. Line a baking sheet with parchment paper.
  4. Spread the carrots in a single layer on the baking sheet.
  5. Roast for 15 to 25 minutes, checking for fork-tenderness and light browning.
  6. Garnish with parsley before serving.

Notes

For added flavor, squeeze a bit of lemon juice over the carrots just before serving. Store leftovers in an airtight container for up to 4 days.
