  • Sea salt and freshly ground black pepper (for sprinkling)
  • Zest of 1 lemon
  • ¼ cup chopped fresh parsley
  • Grated Parmesan cheese (or nutritional yeast for dairy-free version)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Break the cauliflower into bite-sized florets.
  3. Toss the cauliflower with olive oil, salt, and pepper until well-coated.
  4. Spread the florets on the baking sheet and roast for 25-35 minutes, stirring halfway through.
