Roasted Delicata Squash with Crispy Onions

  • 2 medium delicata squash
  • 2 tablespoons olive oil or avocado oil
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder or 1 clove minced garlic
  • 1 teaspoon maple syrup or brown sugar (optional)
  • 1/2 cup crispy fried onions (store-bought or homemade)
  • Optional toppings: Fresh thyme, chopped parsley, grated parmesan, or red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the delicata squash, cut in half lengthwise, and scoop out the seeds before slicing into 1/2-inch thick half-moons.
  3. In a large bowl, toss the squash with olive oil, garlic, salt, pepper, and optional maple syrup or sugar until well-coated.
  4. Spread the squash on a lined baking sheet, ensuring pieces are not overlapping.
  5. Roast for 20-25 minutes, flipping halfway through for even cooking.
  6. In the last 5 minutes, sprinkle crispy fried onions on top to warm them up.
  7. Optional: Broil for an additional 1-2 minutes for extra caramelization.
  8. Serve hot, garnished with fresh herbs or parmesan if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat to maintain crispiness.
