  • 3 bell peppers (any color)
  • 2 tablespoons cooking oil
  • 1 pound Italian sausage (or your choice of ground meat)
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 cup marinara sauce
  • 1/2 cup uncooked long-grain white rice
  • 3/4 cup chicken broth
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with cooking spray or oil.
  2. Wash and slice the tops off the bell peppers; remove seeds and membranes.
  3. Heat cooking oil in a skillet over medium heat, add diced onions and sauté until translucent (3-4 minutes). Stir in minced garlic and cook for an additional minute.
  4. Add Italian sausage to the skillet, cooking until browned (5-7 minutes). Drain excess fat if necessary.
  5. Stir in rice, marinara sauce, chicken broth, and spices; simmer for about 10 minutes.
  6. Fill each bell pepper with the sausage and rice mixture, placing them upright in the baking dish.
  7. Pour extra marinara sauce over the top and sprinkle with mozzarella cheese.
  8. Cover with foil and bake for 30 minutes, then remove the foil for the last 10 minutes until the cheese is melted and golden brown.

Notes

Feel free to customize the filling with extra veggies or different proteins. For a low-carb option, substitute rice with quinoa or cauliflower rice.
