Irresistibly Delicious Roasted Sweet Potatoes

Perfectly caramelized and tender roasted sweet potatoes, bringing warmth and nostalgia to your dinner table.

  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • Optional: Fresh or dried rosemary or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. In a large mixing bowl, combine cubed sweet potatoes, olive oil, salt, and pepper. Add optional herbs if desired.
  4. Spread the sweet potatoes on a parchment-lined baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and golden.
  6. Remove from the oven and serve warm, garnished with extra herbs or flaky sea salt.

Notes

For a crispy finish, broil for 1-2 minutes at the end of roasting. Store leftovers in an airtight container for up to 4 days.
