Famous Royal Icing

A versatile and easy-to-make royal icing perfect for decorating cookies and cakes.

Ingredients

  • 2 tbsp meringue powder
  • 4 tbsp warm water
  • 2 cups powdered sugar, sifted
  • 1 tbsp light corn syrup
  • 2 tsp lemon extract
  • 1 tsp white food coloring (optional)
  • Desired food coloring
  • Additional water or more powdered sugar (for consistency)

Instructions

  1. In a large bowl, mix meringue powder and warm water with a hand mixer on high until completely dissolved and frothy.
  2. Add half of the powdered sugar and mix on low until incorporated.
  3. Add the remaining powdered sugar, corn syrup, and lemon extract. Mix on low until combined, then switch to high and beat for 2 minutes until thick and holding soft peaks.
  4. If desired, add food coloring and mix to create the desired hue.
  5. Adjust consistency by adding warm water until reaching the desired thickness for piping or flooding.
  6. Cover with plastic wrap and let rest for 30 minutes if necessary.
  7. Decorate cookies and let dry uncovered overnight.

Notes
