Salted Caramel Chocolate Chip Cookies

Delightfully chewy cookies combining rich caramel and chocolate, with a perfect balance of sweet and salty.

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 3/4 cup light-brown sugar
  • 1 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 cup semisweet and/or milk chocolate chips
  • 1 cup caramel bits or soft caramel candies
  • 1 teaspoon sea salt (for sprinkling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour and baking soda. Set aside.
  3. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in chocolate chips and caramel bits until evenly distributed.
  7. Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. Sprinkle with sea salt.
  8. Bake for 10-12 minutes, until edges are lightly golden and centers look soft.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container at room temperature for up to 1 week.
