  • 4 grams egg white powder (optional)
  • 100 grams egg whites (room temperature)
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 187 grams Domino® Powdered Sugar (for royal icing)
  • 1 tbsp meringue powder
  • 4 tbsp water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring
  • 50 grams desiccated coconut (shredded)
  • 63 grams all-purpose flour (for sugar cookie buttercream)
  • 113 grams unsalted butter (room temperature)
  • 50 grams Domino® Golden Sugar (for frosting)
  • 156 grams Domino® Powdered Sugar (for creamy texture)
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1/2 tbsp milk or heavy cream

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine almond flour and powdered sugar. Sift twice.
  3. In a separate bowl, whisk egg whites on medium speed, gradually adding sugar until stiff peaks form (5-7 minutes).
  4. Fold the almond flour mixture into the meringue gently until you achieve a flowing batter.
  5. Transfer to a piping bag and pipe onto parchment-lined sheets, creating 1.5-inch circles.
  6. Let macarons sit at room temperature for 30 minutes until a skin forms.
  7. Bake for 15-18 minutes until smooth and raised.
  8. In a bowl, combine meringue powder and water, gradually mixing in powdered sugar until smooth for royal icing.
  9. Cream butter and golden sugar for sugar cookie buttercream, mixing in powdered sugar, extracts, and milk.
  10. Pipe buttercream on half of the macaron shells and sandwich with another shell.
  11. Decorate with royal icing.

Notes

Ensure butter is at room temperature for easy mixing. Sift almond flour and powdered sugar together for a smooth base. Store in an airtight container in the fridge or freeze for longer storage.
